The roll paper that's used to make receipts, like regular cash register
receipts, what kind of paper is that? Let's say I wanted some 8.5"x11"
size sheets of it, what would I order?

office depot or max, or staples ect. will sell you a two roll package
or fax thermal paper, similuar to the receipt paper there both thermal
paper, try it out yes the rolls come in 8x11

never seen it like that before just in 8 inch 40 foot rolls. but its a
possibility like at a special office or business supply store. i just
get the roles and cut my own sheets

You can get it in rolls, 8.5" wide.

It would depend on what type of POS printer you have. If it's one of the
older types chances are it uses plain paper. If it's one of the newer
thermal printers it would use paper compatible with that type of printer
which has a special waxy like coating on it.
